Recipe for Candied Bacon
Ingredients:
• 12 slices bacon, about 1/4-inch thick
• Finely ground black pepper
• 1/3 cup light brown sugar
• Equipment: 2 baking sheets, preferably the same size
Directions:
Preheat the oven to 325 degrees F.
Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.
Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. If it is not golden brown and fairly crispy, resist the temptation to turn up the oven temperature, and cook it for 10 to 15 minutes longer.

Ingredients:
• 2 teaspoons vegetable oil
• 1 cup packed light brown sugar
• 3/4 teaspoon cayenne pepper
• 1 pound thinly sliced bacon
Directions
Preheat the oven to 350 degrees F. Line a broiler pan with aluminum foil, and position broiler rack on top of pan. Lightly coat the rack with the vegetable oil.
Combine the brown sugar and cayenne in a shallow dish, stirring to mix well. Press 1 side of each slice of bacon firmly into the spiced sugar to coat well. Arrange the slices of bacon on top of the broiler rack in a single layer, sugared-side up. If there is any sugar remaining in the dish, sprinkle it on top of the bacon slices evenly.
Bake until the bacon is crisp and the sugar is bubbly, 15 to 20 minutes. Transfer to paper towels to drain briefly, then to a plate or serving dish to cool. (Can be made several hours ahead) Serve warm or at room temperature.

Maple-Candied Bacon
Ingredients:
• 1 pound thick sliced bacon, good quality
• 1/2 cup maple syrup, Grade B
• 1 teaspoon Dijon mustard
• Finely ground black pepper
Directions
Preheat oven to 400 degrees F.
Line a rimmed baking sheet with heavy foil. Place a baking rack over the lined sheet tray and arrange the bacon slices across the rack next to each other, not overlapping.
In a small bowl, whisk the maple syrup and mustard. Generously spoon over the top of the bacon, and bake 12 to 15 minutes. Turn the bacon over and baste with syrup mixture. Bake an additional 5 to 10 minutes, or until the bacon has reached desired crispiness.
Carefully remove the pan from the oven. Sprinkle hot bacon with a scant pinch of finely ground black pepper. Let the bacon rest on the rack for 5 minutes.

Bacon Ice Cream
About ¾ qt
If you don’t have half-and-half, simply mix together heavy cream and whole milk in equal proportions.
For the candied bacon;
5 strips bacon
about 2 teaspoons light brown sugar
For the ice cream custard:
- 3 tablespoons (45g) salted butter
- ¾ cup (packed) brown sugar (140g), light or dark (you can use either)
- 2¾ (675ml) cup half-and-half
- 5 large egg yolks
- 2 teaspoons dark rum or whiskey
- ¼ teaspoon vanilla extract
- optional: ¼ teaspoon ground cinnamon
1. To candy the bacon, preheat the oven to 400F (200C).
2. Lay the strips of bacon on a baking sheet lined with a silicone mat or aluminum foil, shiny side down.
3. Sprinkle 1½-2 teaspoons of brown sugar evenly over each strip of bacon, depending on length.
4. Bake for 12-16 minutes. Midway during baking, flip the bacon strips over and drag them through the dark, syrupy liquid that’s collected on the baking sheet. Continue to bake until as dark as mahogany. Remove from oven and cool the strips on a wire rack.
5. Once crisp and cool, chop into little pieces, about the size of grains of rice.
(Bacon bits can be stored in an airtight container and chilled for a day or so, or stored in the freezer a few weeks ahead.)
6. To make the ice cream custard, melt the butter in a heavy, medium-size saucepan. Stir in the brown sugar and half of the half-and-half. Pour the remaining half-and-half into a bowl set in an ice bath and set a mesh strainer over the top.
7. In a separate bowl, stir together the egg yolks, then gradually add some of the warm brown sugar mixture to them, whisking the yolks constantly as you pour. Pour the mixture back into the saucepan.
8. Cook over low to moderate heat, constantly stirring and scraping the bottom with a heatproof spatula, until the custard thickens enough to coat the spatula.
9. Strain the custard into the half-and-half, stirring over the ice bath, until cool. Add liquor, vanilla and cinnamon, if using.
10. Refrigerate the mixture. Once thoroughly chilled, freeze in your ice cream maker according to the manufacturer’s instructions. Add the bacon bits during the last moment of churning, or stir them in when you remove the ice cream from the machine.

Ingredients:
• 100g breakfast bacon, sliced
• 50g brown sugar
• 1/4 tsp cayenne pepper
• 1/4 tsp ginger powder
1. Preheat the oven to 200°C (~390° Fahrenheit) and switch the circulating fan on, if available. Line a tray with parchment paper and place the bacon stripes flat next to each other.
2. Prepare the spiced sugar by mixing together the brown sugar, the cayenne pepper and the powdered ginger in a small bowl. Evenly spread the spiced sugar with a teaspoon over the bacon stripes. Try not to scatter too much of it on the parchment paper itself, because it will burn there very fast and turn black.
3. Bake on the middle level for 10 to 15 minutes or until the sugar has melted completely and the bacon has gained some color. Don’t leave the bacon unattended, it’s only a short moment from crisp to burnt!
4. Remove the tray, immediately lift up the caramelized bacon slices with a spatula (don’t burn yourself!), before the sugar hardens again. Best eaten still warm.
